Keeps you out of trouble. Meanwhile we are making masks for the hospital and husband has a go fund me page for head and beard shave next week to buy the medical staff much asked for hand cream and toiletries

Another lovely sunny morning - I’ve been given a reprieve from moving rubble today 💪🏻😀💃💃 so escaped to my sanctuary (the kitchen) - getting carried away as usual 😜 3 chocolate cakes, 2 coffee and walnut cakes, 2 dozen chocolate chip cookies, a traditional trifle and a dozen big cheese and sundried tomato scones so far - haha - love making things that bring happiness to others - just wish I could share them with you all - missing my Tearoom and my lovely customers - take care everyone and will post photos later x ... Hi Donna. Do you have a favourite cake recipe?. Am making another cake for my daughter to take to work at the hospital to share with staff on her unit. The coconut one was delicious.xx

Is it possible to buy a cake or part of a cake? Maybe in exchange for some fresh chicken? We have loads of chicken products coming back from the market, but I think my kids would rather have cake;) PM me if Vente Direct possible !

Well my chickens are keeping us fully stocked with eggs so thought I would use some of them baking some cakes (any excuse to bake haha)
Couple of chocolate cakes and coconut cakes and a spiced apple cake (apples needed using up)
Love the smell in the kitchen right now 🙂

Saugé Vintage Tearoom

I thought today I would bake one of my favourite cakes - it is Mother’s Day after all (wishing all the mums out there a wonderful day) - it’s Coconut Cake - a lovely light, soft cake and one piece is just never enough 😈

I tend to cook cakes like this in loaf tins as so much easier to slice 🙂

Recipe -
Cream together 340g butter with 250g sugar then add 5 lge eggs, 380g SR Flour, 1tsp vanilla essence, 1tsp almond essence, 1 1/2tsp baking powder, 1/2tsp baking soda, 1 cup milk and 110g shredded coconut - once combined add to buttered/lined tins and bake at 180 degrees for around 45 minutes

For the décoration
I personally like a little jam in my cakes - so I have used my own homemade Pear Jam which is delicately flavoured and allows the coconut to still come through - but entirely up to you what you use.
I then use a buttercream with a little mascarpone added yum
Again decoration up to you (go wild) - mine is buttercream with a sprinkling of coconut and a cherry on top.

Hello, the mother's day is the sunday 7 June in France 😉...

Ooh, I love nre recipes, so will try this, thank you. Loaf cakes are great aren't they. I tend to make two smaller ones and freeze one for another day. Today's effort for me was sticky gingerbread cake and cheese scones, but having to ration my eggs and flour I probably won't be able to bake as often. 🥚🌼. 😊

That sounds delicious. As soon as I have enough eggs and flour I will give it a go. Just managing to get the basics at the moment, but not flour😢
